Cream Puffs

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the choux dough

  1. Combine butter and boiling water in a saucepan; bring to a boil.

  2. Stir in flour while boiling until well combined.

  3. Let the mixture cool, then add 5 beaten eggs and mix well.

  4. Drop spoonfuls of the mixture onto baking sheets.

Bake and make the filling

  1. Bake in a preheated oven at 400°F (200°C) for 30 minutes.

  2. Whisk together 1 tablespoon flour, 1 pint milk, 1 cup sugar, and 2 beaten eggs for the cream filling.

  3. Stir the mixture into boiling milk until thickened.

  4. Once nearly cool, flavor with lemon or vanilla extract.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Add structure and richness as they set the puffs and thicken the custard.
Butter
Adds fat and richness, tenderizing the dough and contributing flavor to the puffs.
All-purpose flour
Provides the starch and gluten that give the dough its structure and set the puffs.
Sugar
Adds sweetness to the cream filling.
Milk
Forms the base of the cream filling, adding moisture and richness as it thickens.

The step that matters

Stir the filling into boiling milk until thickened. The flour and egg mixture must be stirred constantly while the milk boils so the starch gelatinizes and the eggs cook smoothly. Lumps or curdling result if it is not stirred or heated enough.

Swap the lemon
