Add 1 pint of coarse sea salt to 100 cucumbers.
Pour enough boiling water over the cucumbers to cover them.
Tie the container tightly to keep the steam in and let it stand for 24 hours.

What each ingredient does
- Cucumbers
- The main vegetable that becomes the pickle, firmed and flavoured by the brine and vinegar.
- Coarse sea salt
- Draws water out of the cucumbers and seasons them during the initial brine.
- Boiling vinegar
- Adds acidity that preserves the cucumbers and gives the pickle its sharp flavour.
The step that matters
Wipe the cucumbers dry without breaking the skins. Damaged skins let the brine and vinegar penetrate unevenly and invite spoilage, so the cucumbers must stay intact before they are covered with vinegar.
