What each ingredient does

Grapes
Provide the pulp, juice, and skins that supply flavor, acidity, and natural pectin for setting.
Sugar
Sweetens the preserves and, as the syrup concentrates, helps it thicken and set.

The step that matters

Boil hard until the syrup thickens. As water evaporates, the sugar and pectin concentrate and begin to gel. Stopping too early leaves the preserves runny, while overcooking makes them stiff and sticky as the sugar crystallizes.
