Peach Jelly

Ingredients

Directions

Prepare the juice

  1. Crack the peach seeds, extract the kernels, and place them in a jar with the sliced peaches.

  2. Set the jar in a pot of water and stir occasionally until the fruit is tender.

  3. Strain the mixture to obtain the peach juice.

Make the jelly

  1. For each pint of peach juice, add the juice of one lemon and one pound of sugar.

  2. Heat the sugar until very hot, then add it to the boiling juice after it has boiled for twenty minutes.

  3. Bring the mixture to a boil and remove it from the heat immediately.

What each ingredient does

Peaches
Provide the fruit flavor and the pectin-bearing juice that gives the jelly its body.
Sugar
Sweetens the jelly and helps it set into a firm, spreadable gel.
Lemon juice
Adds acidity that brightens the flavor and supports gel formation.
Peach seeds
Kernels are steeped with the fruit to add a subtle almond-like aroma.

The step that matters

Adding the hot sugar to the boiling juice. Sugar must be heated before it goes in so the boil does not drop and the mixture keeps reaching the temperature needed to set. Removing it from the heat right away prevents overcooking, which can make the jelly stiff or sugary.

Swap the lemon
