What each ingredient does

Ripe grapes
Provide the fruit juice and natural pectin that help the jelly set.
Granulated sugar
Sweetens the jelly and helps it set by binding water and pectin.

The step that matters

Boil until the mixture drops short from the spoon. Sugar, pectin and acid must reach the right concentration to gel. Undercooking leaves a runny jelly, while overcooking can make it stiff or sugary. Checking how the drop falls from the spoon shows when the set point is near.
