Silver Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine the grated potato, lemon juice, lemon rind, beaten egg white, white sugar, and cold water.

  3. Pour the mixture into a prepared pie crust and bake until set.

Top and serve

  1. In another bowl, beat the egg whites until stiff peaks form.

  2. Gradually add ½ cup sugar and lemon flavoring to the egg whites.

  3. Spread the meringue over the baked pie and lightly brown it in the oven.

  4. Serve fresh.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White potato
Grated potato thickens the lemon filling into a soft, sliceable custard-like texture.
Lemon juice
Adds acidity that brightens the sweet filling and balances its sugar.
Egg whites
Beaten into stiff peaks, they form the meringue topping that sets and browns in the oven.
White sugar
Sweetens the filling and helps give the meringue stability and a glossy finish.

The step that matters

Bake the filling until set. Grated potato and egg white need enough heat to thicken fully; underbaked filling stays runny and can make the pie soggy when cut.

Swap the potato

How well each one fits the dish's main ingredients (lemon, egg, sugar):

  1. Asparagusfits better
  2. Arrowrootfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against lemon, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
