Another Apple Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the pudding

  1. In a large bowl, mix together the sugar, apples, butter, egg yolks, and lemon juice until well combined.

  2. Pour the mixture into a baking dish and bake for 30 minutes.

Make the meringue and finish

  1. While the pudding is baking, beat the egg whites until soft peaks form, then gradually add 5 tablespoons of sugar until stiff peaks form.

  2. Once the pudding is done, spread the meringue over the top and return to the oven until golden brown.

  3. Serve with sauce.

What each ingredient does

Eggs
Egg yolks enrich and set the pudding, while whipped whites form the meringue topping.
Butter
Adds fat and richness, giving the pudding a tender, moist texture.
Apples
Provide moisture and fruity body to the pudding base.
Sugar
Adds sweetness and helps stabilize the whipped egg white meringue.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness.

The step that matters

Beating the egg whites to stiff peaks. Sugar must be added gradually to whipped whites so they form stable, glossy stiff peaks. Under-beaten or greasy whites will weep or collapse, leaving a loose meringue that does not hold its shape or brown well.

Swap the apple

How well each one fits the dish's main ingredients (sugar, butter, egg, lemon):

  1. Vanillafits better
