What each ingredient does

Ground coffee
Supplies the flavor and aroma compounds that the hot water extracts.
Boiling water
Acts as the solvent that dissolves flavor compounds from the grounds as it drips through.

The step that matters

Keep the coffee hot without boiling it. Boiling the coffee can over-extract bitter compounds from the grounds and scorch the liquid, dulling its flavor. Holding it just below boiling keeps the taste smooth and balanced.
