Turkey with Chesnuts

Ingredients

Directions

  1. Roast 25 chesnuts and peel them. Save 8-10 whole chesnuts and bruise the rest in a mortar with the liver and ham.

  2. Add chopped sweet herbs and parsley, season with mace, nutmeg, pepper, and salt. Mix well.

  3. Stuff the mixture into the turkey's cavity, then spit and tie the neck and vent closed.

  4. For the sauce, cut the remaining chesnuts into pieces and add them to a strong gravy with a glass of white wine.

  5. Thicken the sauce with butter rolled in flour.
