Fish Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Sprinkle the fish with coarse sea salt to firm it up.

  2. Slice the fish and season with pepper and salt.

  3. Place the fish in a dish mixed with oysters.

  4. Combine oyster liquor, a little stock, flour, and butter in a saucepan and boil until thickened.

  5. Pour the mixture into the dish cold.

  6. Cover with pastry and bake in a 400°F (200°C) oven.

  7. Once baked, pour warm cream over the pie.
