Gee,se and Turkeys

Ingredients

Directions

  1. Cut the goose and turkey down the rump and bone them.

  2. Lay them open and season all over with nutmeg, white pepper, and double the quantity of salt.

  3. Place the turkey inside the goose and keep them in seasoning for two nights and a day.

  4. Roll them up tightly like collared beef and bind with tape.

  5. Bake in a long pan until tender.

  6. Let them sit in the hot liquid for one hour, then remove and let cool overnight.

  7. Unbind and place in a pot, pouring clarified butter over them.

  8. Slice thinly as needed for serving.
