What each ingredient does

Dates
Cook down to a soft pulp that gives the mold its body and sweetness.
Gelatin
Sets the date mixture so it holds its shape when unmolded.
Sugar
Adds sweetness that balances the tart lemon and the dates.
Lemon juice
Adds acidity that brightens the flavor and cuts the sweetness.
Whipped cream
Adds richness and a light, airy contrast to the firm date mold.

The step that matters

Dissolve the gelatin fully before adding it. Gelatin must be completely dissolved and evenly mixed into the dates before the mold is filled. Undissolved granules leave soft spots and uneven texture, and the mixture may not set firmly.
