Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Boil and mash the potatoes while warm with the butter, salt, and enough milk to make a soft batter.

  2. When cool, add the flour and mix into a light dough; add more milk if necessary.

  3. Knead the dough well, return it to the mixing pan, and let it rise until light.

  4. Knead it again, then shape into small cakes and place them on slightly buttered baking sheets.

  5. Let the cakes rise in a warm place until light.

Bake and finish

  1. Bake in a preheated oven at 400°F (200°C) until done.

  2. When finished, lightly wash the tops with water and cover with a clean towel to keep them soft.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Add moisture and a soft, tender crumb to the dough.
Flour
Forms the gluten structure that traps gas and gives the rolls their body.
Yeast
Produces carbon dioxide during rising, making the rolls light and airy.
Butter
Adds fat that tenderizes the crumb and gives a rich flavor.
Milk
Hydrates the flour and softens the dough for a tender texture.

The step that matters

Letting the cakes rise until light. Under-proofed rolls stay dense and heavy, while the yeast needs warmth and time to produce enough gas to lighten the crumb before baking.

Swap the potato

How well each one fits the dish's main ingredients (butter, flour, milk):

  1. Potatothe original
  2. Arrowrootfits about as well
  3. Leekfits less well
  4. Shallotfits less well

Fit is the average pairing score against butter, flour, milk. Candidates are from the same food group and used in at least 100 recipes.
