Good Plum Cake

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat your oven to 300°F (150°C).

  2. Beat the butter until creamy, similar to making pound cake.

  3. Mix in the currants, cut peels, citrons, lemon zest, nutmeg, pudding spice, brandy, and eggs.

  4. Add the chopped almonds and stir until combined.

  5. Line a cake pan with parchment paper and butter it.

  6. Pour the mixture into the prepared pan.

  7. Bake in the preheated oven until done.

  8. Remove the hoop from the pan but leave the parchment paper on.
