What each ingredient does

Eggs
Add structure and richness, helping bind the dough and enrich its crumb.
Butter
Adds fat and richness, softening the crumb and carrying flavor.
Yeast
Produces gas as it ferments, making the dough rise and become light.
Flour
Forms the gluten network that gives the stiff dough its structure.
Sugar
Sweetens the cake and feeds the yeast while adding tenderness.
Raisins
Add chewy sweetness and moisture throughout the cake.

The step that matters

Tie the mixture loosely in a cloth and place it in a pail of water until it rises to the top.. The dough must be able to expand as yeast produces gas. Tying it loosely leaves room for rising, and the dough is ready when it floats, showing the gas has lightened it.

Swap the lemon

How well each one fits the dish's main ingredients (egg, butter, milk, flour, sugar, raisin, almond):

Fit is the average pairing score against egg, butter, milk, flour, sugar, raisin, almond. Candidates are from the same food group and used in at least 100 recipes.
