Blueberry Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream the butter and sugar together until light and fluffy.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Stir in the molasses and rich milk.

  5. In a separate bowl, combine the cream of tartar and baking soda.

  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

  7. Gently fold in the blueberries.

Bake

  1. Pour the batter into a greased cake pan and bake for 30-40 minutes or until a toothpick comes out clean.

What each ingredient does

Butter
Creams with sugar to trap air and give the cake a tender, rich crumb.
Eggs
Add structure and richness, binding the batter as the cake sets.
Cream of tartar
Acidic partner to baking soda, helping the cake rise and keep a light texture.
Baking soda
Reacts with the acidic ingredients to release gas, leavening the cake.
Molasses
Adds sweetness, moisture and a deep, caramel-like flavor.
Blueberries
Add moisture, flavor and bursts of fruit through the cake.

The step that matters

Fold in the blueberries gently. Overmixing develops gluten and toughens the crumb, while vigorous stirring crushes berries and turns the batter streaky. A light fold keeps the cake tender and the fruit whole.
