Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it boils, giving the pudding its body.
Milk
Forms the liquid base that the tapioca thickens into a creamy pudding.
Egg yolks
Enrich the pudding, adding richness and helping it set smoothly.
Egg whites
Whipped to stiff peaks, they form a light topping that browns in the oven.

The step that matters

Beating the egg whites to stiff peaks. Egg whites must be whipped until they hold firm peaks, because air trapped in the foam gives the topping its volume and light texture. Underbeaten whites stay runny and sink into the pudding.

Swap the coconut

The recipe marks coconut as optional. How well each one fits the dish's main ingredients (milk, egg, sugar, lemon):

  1. Vanillafits better
  2. Orangefits better
  3. Figfits better
  4. Coconutthe original

Fit is the average pairing score against milk, egg, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
