Why it works: Clove and allspice match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 7,874 recipes. Both carry estragole, which smells anise, licorice. The science ↓
Pickled Peppers
Ingredients
Directions
Brine
In a large bowl, combine the salt and scalding water to cover the peppers.
Place a weight over the peppers to keep them submerged and let them soak for 2 days.
After 2 days, remove the peppers and let them drain.
Prepare and pickle
Make a small opening in the side of each pepper to release excess water.
Wipe the peppers clean and place them in a stone jar.
Add the cloves, allspice, and alum to the jar.
Cover the peppers completely with cold vinegar.

What each ingredient does
- Peppers
- Are the main vegetable; the brine softens them and the vinegar preserves their texture and flavour.
- Coarse sea salt
- Draws water out of the peppers and seasons them during the soak.
- Cloves
- Add warm, aromatic spice flavour to the pickling liquid.
- Allspice
- Adds warm, aromatic spice flavour to the pickle.
- Cold vinegar
- Provides acidity that preserves the peppers and gives the pickle its sharp taste.
The step that matters
Soaking the peppers in salt brine. Salt draws water out of the peppers through osmosis, so they stay firm and absorb less water later. The brine must fully cover the peppers and be kept submerged for the full two days, or parts may spoil.
