What each ingredient does

Fresh spinach
Forms the bulk of the dish and holds its shape when pressed into molds.
Thick rich gravy
Adds flavor and moisture that seasons the spinach and is then cooked down.

The step that matters

Cooking the spinach until very dry before molding. Excess moisture left in the spinach dilutes its flavor and keeps it from packing firmly. Cooking off the water concentrates the taste and lets the spinach hold a clean shape when pressed into the molds.
