Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air and add richness and tender texture.
Egg
Binds the batter and adds structure and richness to the crumb.
Mashed potatoes
Adds moisture and a soft, tender crumb to the muffins.
Flour
Provides the main structure that sets as the muffins bake.
Baking powder
Releases gas during baking so the muffins rise and become light.
Sweet milk
Hydrates the flour and adds moisture for a soft texture.

The step that matters

Adding the dry ingredients alternately with the milk. Alternating additions keep the batter smooth and prevent overmixing, which would develop too much gluten and make the muffins tough and dense.
