Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Combine the chopped meat and gravy in a bowl.

  3. In a saucepan, cook the barley with 1 cup of cold water until the water is absorbed and the barley is soft.

  4. Add the cooked barley to the meat and gravy mixture.

  5. Stir in the chopped potatoes, onion, salt, pepper, and water or stock.

Bake

  1. Pour the mixture into a casserole or baking dish.

  2. Optionally, sprinkle bread crumbs over the top before baking.

  3. Bake for one hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold meat
Provides the main protein and bulk of the hash.
Barley
Adds chewy texture and absorbs liquid, thickening the mixture as it bakes.
Potatoes
Add starch and body, becoming tender and helping bind the hash.
Gravy
Adds moisture and savory flavor that keeps the meat from drying out.

The step that matters

Cooking the barley until soft. Barley must fully absorb its cooking water and soften before mixing, because raw grains would stay hard during the short baking time and leave the hash gritty.

Swap the onion

How well each one fits the dish's main ingredients (meat, barley, potato, pepper):
