Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the croquette, giving a soft, moist interior.
Eggs
Bind the mixture together and help the coating set during frying.
Cracker crumbs
Add body to the filling and form a crisp, browned outer coating.
Melted butter
Adds richness and moisture to the potato mixture.

The step that matters

Frying in hot oil. If the oil is not hot enough, the croquettes absorb excess oil and turn greasy, while the crumb coating may not set before the filling softens. Hot oil quickly crisps the outside and browns it evenly.

Swap the white pepper

How well each one fits the dish's main ingredients (potato, pepper, butter, egg):

  1. Parsleyfits better
  2. Dillfits better
