Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the bulk and starch that give the dumplings their body.
Egg
Binds the mixture so the dumplings hold together while cooking.
Flour
Absorbs moisture and firms the mixture so it can be shaped.
Baking powder
Releases gas that lightens the dumplings so they are less dense.

The step that matters

Drain the grated potato thoroughly. Excess liquid from grated potato dilutes the mixture and makes dumplings soggy and loose, so they may fall apart in the boiling liquid. Squeezing it dry in a cloth keeps the dough firm enough to hold its shape.

Swap the potato

How well each one fits the dish's main ingredients (egg, rice, flour):

  1. Arrowrootfits better
  2. Asparagusfits better
  3. Welsh onionfits better
  4. Potatothe original

Fit is the average pairing score against egg, rice, flour. Candidates are from the same food group and used in at least 100 recipes.
