What each ingredient does

Milk
Forms the liquid base that cooks the oatmeal into a smooth, thin gruel.
Fine oatmeal
Thickens the milk as its starch swells during boiling and simmering.

The step that matters

Pour back into the saucepan, leaving some sediment behind.. Oatmeal settles to the bottom and can scorch or make the gruel gritty. Pouring off the clear liquid and leaving the sediment keeps the texture smooth.
