Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable cream as it cools in the refrigerator.
Cream
Adds richness and a light, airy texture when whipped and folded in.
Strong coffee
Provides the main coffee flavor and liquid base for the cream.
Granulated sugar
Sweetens the mixture and balances the bitterness of the coffee.

The step that matters

Fold in the whipped cream gently until mixed. Overmixing knocks air out of the whipped cream, making the dessert dense instead of light. Stop folding once no streaks remain, and do this only after the mixture has cooled so the cream does not melt or deflate.
