What each ingredient does

Butter
Creams with sugar to trap air and give the cake a tender, rich texture.
Baking soda
Reacts with the acidic apple sauce to produce gas that helps the cake rise.
Flour
Provides the structure that sets the cake as it bakes.
Apple sauce
Adds moisture and tenderness to the crumb.
Sugar
Sweetens the cake and helps brown it while softening the crumb.

The step that matters

Dissolving the baking soda in warm water before adding it to the apple sauce. Baking soda needs moisture to dissolve evenly and react with the acid in the apple sauce. Dissolving it first spreads the leavening through the batter, so the cake rises evenly rather than in pockets.

Swap the apple
