Apple Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat your oven to 350°F (175°C).

Make the batter

  1. In a large bowl, cream together the sugar and lard or butter until light and fluffy.

  2. Stir in the raisins and stewed apple.

  3. Add the ground cloves, ground nutmeg, and salt, mixing well.

  4. Gradually add the flour, stirring until just combined.

Bake

  1. Pour the batter into a greased cake pan and smooth the top.

  2. Bake for 30-40 minutes, or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the cake and helps create a tender crumb when creamed with fat.
Lard or butter
Adds fat for tenderness and richness when creamed into the sugar.
All-purpose flour
Provides the structure that holds the cake together as it bakes.
Stewed apple
Adds moisture and apple flavor to the batter.
Raisins
Adds chewy sweetness and bursts of fruit flavor throughout the cake.

The step that matters

Stirring in the flour. Once flour is added, gluten begins to form, so stirring only until just combined keeps the cake tender rather than tough and dense.

Swap the apple

How well each one fits the dish's main ingredients (sugar, butter, raisin, clove, nutmeg, flour):
