What each ingredient does

Rice
Forms the bulk of the pudding and absorbs the milk as it bakes, giving body.
Milk
Provides the liquid that the rice absorbs and that the eggs set into a custard.
Eggs
Set during baking to bind the milk and rice into a creamy, sliceable custard.
Suet
Melts into the pudding as it bakes, adding richness and moisture.
Moist sugar
Adds sweetness and a soft, molasses-like flavour to the custard.

The step that matters

Boiling the rice until it swells. Rice that is only partly swollen before baking will stay firm and absorb the custard unevenly, so it should be fully softened before it goes into the dish.

Swap the nutmeg

How well each one fits the dish's main ingredients (rice, milk, egg, sugar, butter):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Turmericfits less well
  4. Gingerfits less well

Fit is the average pairing score against rice, milk, egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
