Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base that the tapioca cooks and thickens in.
Minute tapioca
Thickens the milk as it cooks, giving the cream its body.
Sugar
Sweetens the cream and softens the tapioca's set.
Eggs
Enrich the custard and, with the whites folded in, add lightness and body.
Canned peaches
Provide fruit flavour and moisture under the cooled cream.

The step that matters

Folding in the egg whites. Stiffly beaten whites hold air that gives lightness. Folding gently, rather than stirring, keeps that air in the mixture so the cream stays fluffy rather than dense.

Swap the peach

How well each one fits the dish's main ingredients (milk, sugar, egg, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits about as well
  4. Peachthe original

Fit is the average pairing score against milk, sugar, egg, cream. Candidates are from the same food group and used in at least 100 recipes.
