Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oatmeal
Provides the starch that thickens the water into a porridge as it cooks.
Cream
Adds richness and a smooth, soft mouthfeel to the thinned gruel.

The step that matters

Cooking the oatmeal for 2.5 hours in a double boiler. A double boiler holds the heat gently, so the oats can soften and thicken slowly without scorching on the bottom of the pan. Gentle, steady heat gives a smooth porridge.

Swap the nutmeg

The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (sugar, cream):

  1. Nutmegthe original
  2. Cinnamonfits about as well
  3. Gingerfits less well
  4. Peppermintfits less well

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
