Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Pour the boiling water over the cornmeal and let it cool.

  2. Sift the baking powder, salt, and cornmeal together.

  3. Beat the egg yolks until light, then add to the cornmeal.

  4. Stir in the milk, cornmeal, and melted butter to form a smooth batter.

Bake and serve

  1. Beat the egg whites to stiff peaks and fold into the mixture quickly.

  2. Pour into a well-greased shallow pan and bake at 400°F (200°C) for 25 minutes.

What each ingredient does

Yellow cornmeal
Forms the bulk of the crumb and gives cornbread its characteristic flavor and texture.
Eggs
Add structure and richness; whipped whites lift the batter and help it rise.
Baking powder
Releases gas in the batter, helping the cornbread rise and become light.
Milk
Hydrates the cornmeal and provides moisture for a tender crumb.
Melted butter
Adds fat for tenderness, moistness, and richness in the crumb.

The step that matters

Folding in the egg whites. Stiff whites hold air that lightens the batter. Overmixing or letting them deflate while folding knocks out that air, so the cornbread bakes up dense instead of light.
