What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Malaga grapes
Add juicy bulk and sweetness, and hold their shape within the jelly.
Bananas
Add soft texture and body to the jelly.
Oranges
Add citrus flavour and juiciness to the jelly.
English walnuts
Add crunch that contrasts with the soft jelly.

The step that matters

Dissolve the gelatine in cold water first. Gelatine must hydrate fully in cold liquid before boiling water is added. If it is added to hot water without hydrating, it can clump and fail to set evenly.
