Ducks to Roast and Stuff with Potato Stuffing

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the stuffing

  1. Preheat the oven to 350°F (175°C).

  2. Boil the potatoes until tender, then mash them finely.

  3. Boil each onion for 1 minute with a little salt, then chop finely.

  4. Mix the chopped onions with the mashed potatoes, seasoning with salt, pepper, and thyme.

  5. Stuff the duck with the potato and onion mixture.

Roast and baste

  1. Place the duck in a roasting pan with plenty of water and some butter.

  2. Baste the duck every 5 to 10 minutes while roasting.

  3. Once the oil is rendered, rub the duck with butter, sprinkle with flour, and add more hot water as needed.

  4. Add the giblets to the pan; chop finely and mix into the gravy after cooking.

What each ingredient does

Duck
Provides the main meat and the fat that renders and bastes the bird during roasting.
Potatoes
Form the moist, starchy body of the stuffing that holds the bird's interior together.
Onion
Adds savory sweetness and aroma to the stuffing once softened by boiling.
Butter
Adds fat for richness and helps the skin brown during roasting.
Flour
Thickens the pan juices into gravy as it cooks with the drippings.

The step that matters

Once the oil is rendered, rub the duck with butter, sprinkle with flour, and add more hot water as needed.. Duck fat must render out before the skin can crisp, and adding hot water keeps the pan from scorching while the flour thickens the drippings into gravy.

Swap the onion
