Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Break down when passed through a sieve to give the soup its body and thickness.
Butter
Carries the onions and forms the base of the roux, adding richness.
All-purpose flour
Cooked in butter to form a roux that thickens the soup.
Onions
Softened in butter to add savory sweetness and aroma.

The step that matters

Cooking the flour until light brown. Flour must cook in the butter long enough to lose its raw starchy taste, but not so long it darkens too much. Stirring keeps it from scorching, and the cooked roux then thickens the liquid smoothly when combined.

Swap the onion

How well each one fits the dish's main ingredients (potato, flour, butter):

  1. Chivefits better
  2. Leekfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against potato, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
