Why it works: Milk and dates work together. They rank in the top 15% of all ingredient pairs, and cooks put them together in 470 recipes. Both carry acetic acid, which smells sour, vinegar. The science ↓

Soft Oatmeal Bread

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. In a bowl, mix the oatmeal with the scalded milk until well combined.

  2. Add the yellow cornmeal and mix until incorporated.

  3. Let the mixture cool slightly, then quickly add the yolks of the eggs.

  4. Gently fold in the well-beaten egg whites.

Bake and serve

  1. Cover the bottom of a baking pan with chopped dates.

  2. Pour the bread mixture over the dates and bake at 400°F (200°C) for 30 minutes.

  3. Check if done by breaking with a fork; remove with a spoon.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and bind the batter, while whipped whites add lift and a light, airy crumb.
Oatmeal
Forms the body of the bread and absorbs the milk, giving a soft, moist texture.
Scalded milk
Hydrates the oatmeal and softens its starch, helping the batter form a tender crumb.
Yellow cornmeal
Adds coarser texture and a mild corn flavor to the batter.

The step that matters

Gently fold in the well-beaten egg whites.. Egg whites trap air that gives lift. Stirring vigorously knocks that air out, so folding with a light hand keeps the bread soft and airy instead of dense.

Swap the dates

How well each one fits the dish's main ingredients (milk, egg):

  1. Vanillafits better
  2. Figfits better
  3. Lemonfits about as well
  4. Datesthe original

Fit is the average pairing score against milk, egg. Candidates are from the same food group and used in at least 100 recipes.
