Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Best rice
Its starch thickens as it cooks in milk, giving the pudding its body.
Milk
Cooks into the rice to form a creamy, moist base.
Eggs
Yolks enrich and set the custard, while whites add lightness when folded in.
Butter
Adds fat for richness and a tender, smooth texture.
Sugar
Sweetens the pudding and helps keep it soft.
Lemon
Peel adds aromatic flavor to the milk; juice adds bright acidity.

The step that matters

Fold in the stiffly beaten egg whites. Whites trap air that gives the pudding lift. Stirring them in vigorously deflates the foam and leaves the pudding dense, so fold gently until just combined.

Swap the lemon

How well each one fits the dish's main ingredients (rice, milk, butter, sugar, egg):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well
  4. Lemonthe original

Fit is the average pairing score against rice, milk, butter, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
