Candy. Taffy.

Ingredients

Directions

The book gives no oven temperature. The 163°F in the steps was added when the recipe was transcribed, as a starting point.

Make the syrup

  1. Stir the water and sugar over medium heat until the sugar dissolves.

  2. Boil the mixture until it reaches the ball stage (163°F), where a small amount forms a soft ball when cooled in water.

Finish the taffy

  1. Add the butter and lemon juice.

  2. Boil the mixture until it reaches the crack stage, where it hardens quickly in cold water.

  3. Add the vanilla, then pour the mixture into shallow pans to cool.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Confectioners' sugar
Provides the sweet base and body that the candy sets from.
Butter
Adds fat that softens the texture and gives a richer, smoother chew.
Lemon juice
Adds acidity that helps keep the sugar smooth rather than grainy.
Vanilla
Adds aroma that rounds out the sweetness.

The step that matters

Boil to the crack stage. Sugar syrup's texture depends on how far its water has boiled off. Stop short and the taffy stays soft and sticky; go too far and it turns hard and brittle. Checking the stage in cold water helps you stop at the right point.

Swap the lemon

How well each one fits the dish's main ingredients (butter, vanilla, sugar):

  1. Figfits better
  2. Peachfits better
  3. Coconutfits better
  4. Lemonthe original

Fit is the average pairing score against butter, vanilla, sugar. Candidates are from the same food group and used in at least 100 recipes.
