Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Emulsify the oil and vinegar into a thick, smooth dressing.
Salad oil
Provides fat that gives the dressing its rich body and smoothness.
Vinegar
Adds acidity that brightens the rich dressing and seasons the lobster.
Whipped cream
Lightens the dressing and adds a soft, airy texture.

The step that matters

Add the oil drop by drop. Adding oil slowly lets the yolk lecithin surround tiny oil droplets, forming a stable emulsion. Pouring too fast breaks the mixture so it will not thicken or stay smooth.

Swap the lettuce

How well each one fits the dish's main ingredients (egg, vinegar, pepper, lobster, cream):

  1. Capsicumfits better
  2. Mustardfits better
  3. Spinachfits about as well
  4. Lettucethe original

Fit is the average pairing score against egg, vinegar, pepper, lobster, cream. Candidates are from the same food group and used in at least 100 recipes.
