Mont Blanc Potato

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash and pick over the potatoes to remove dead leaves and coarse stems.

  2. Cook the potatoes in boiling salted water for 25 minutes.

  3. Drain and press the potatoes in a colander.

  4. Chop the potatoes finely.

Make the mixture

  1. Return the chopped potatoes to a saucepan.

  2. Add butter, pepper, and vinegar, then stir the mixture.

  3. Toss until very hot.

  4. Whip the potatoes with a wooden or silver fork.

  5. Gradually add hot milk.

  6. Beat in the frothed egg whites.

Bake and serve

  1. Heap the mixture in a deep dish.

  2. Bake in a 400°F (200°C) oven until the surface hardens slightly, removing before it turns brown.

  3. Brush lightly with butter, then serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy body that the mash holds together and bakes into.
Eggs
Whites whipped in add airiness and help the dish set as it bakes.
Milk
Adds moisture and softness to the mashed potato.
Butter
Adds fat for richness and a smooth texture.

The step that matters

Remove before it turns brown. Baking until the surface just hardens keeps the interior light and moist. Leaving it longer lets the surface brown further and the egg-enriched mash dry out and toughen.

Swap the potato

How well each one fits the dish's main ingredients (milk, egg, butter, pepper, vinegar):

  1. Capsicumfits better
  2. Potatothe original
  3. Asparagusfits about as well
  4. Mustardfits less well

Fit is the average pairing score against milk, egg, butter, pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
