Why it works: Syrup and sugar match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Plums

Ingredients

Directions

Prepare the plums

  1. Select sound, uniform plums.

  2. Prick each plum with a needle to prevent bursting.

  3. Pack the plums firmly into sterilized jars without crushing them.

Fill and process

  1. Fill the jars with No. 4 syrup.

  2. Process quarts in a boiling water bath for 15 minutes.

What each ingredient does

Plums
The fruit itself, supplying the main flavour and texture of the preserve.
No. 4 syrup
Sugar syrup that sweetens the fruit and fills the jars around it, adding moisture and preserving.

The step that matters

Prick each plum with a needle. Plum skins can split when heated in syrup because the pressure inside the fruit builds up. Pricking each plum lets that pressure escape, so the fruit stays whole.

Swap the plum

How well each one fits the dish's main ingredients (syrup, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Pearfits better
  4. Plumthe original

Fit is the average pairing score against syrup, sugar. Candidates are from the same food group and used in at least 100 recipes.
