What each ingredient does

Rice
Starch that softens and swells in boiling water to form the cooked grain texture.
Water
Cooking medium that heats the rice and lets the starch gelatinize and soften.

The step that matters

Add the washed rice slowly to the boiling water. Adding rice gradually keeps the water at a rolling boil. A sudden drop in temperature slows cooking and can leave the grains unevenly cooked and gummy.
