Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the cream mixture as it heats, giving the pudding its body.
Scalded cream
Provides richness and fat, giving the pudding a smooth, creamy texture.
Eggs whites
Beaten stiff and folded in, they add lightness and airy structure to the pudding.
Grated pineapple
Adds fruity flavour and acidity, and moisture to the pudding.

The step that matters

Stirring the custard as it thickens. Starch thickens only as it heats, and it can settle and scorch on the bottom if not stirred constantly. Constant stirring keeps the mixture smooth and evenly thickened.
