Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the dough and add structure and richness as they set in the hot fat.
Baking powder
Releases gas in the dough, helping the doughnuts rise and turn light in texture.
Sugar
Sweetens the dough and contributes to browning as the surface fries.
Butter
Adds fat that tenderises the dough and gives a richer flavour.
Sweet milk
Provides the liquid that hydrates the flour and forms the dough.

The step that matters

Fry until rich brown. The hot lard must be fully heated before the dough goes in. If the fat is too cool, the doughnuts absorb oil and turn greasy instead of crisping and browning on the outside.

Swap the ginger

How well each one fits the dish's main ingredients (sugar, egg, butter, milk, nutmeg):

  1. Cinnamonfits better
