Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy base that mashes into a fluffy filling inside the skins.
Egg yolk
Enriches the mashed filling, adding richness and helping it hold together.
Butter
Adds fat for a smoother, richer filling and a more tender texture.
Egg white
Spread over the tops, it sets in the oven and helps the surface brown.

The step that matters

Return to the oven and bake until brown. Egg white needs enough heat to set and brown properly; underbaking leaves the topping wet and pale, while overbaking can dry out the filling.
