What each ingredient does

Salmon
Its flesh firms and turns opaque as the proteins set during cooking.

The step that matters

Boil until cooked through. Salmon is done when its proteins have just set. Past that point they tighten further and squeeze out moisture, so the flesh turns dry and firm. Check it early and remove it as soon as it is cooked through.
