Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Partly cool the mixture.

  2. Beat the yolks of 6 eggs and stir them in gradually.

  3. Flavor with lemon, vanilla, or cinnamon extract.

  4. Whip the whites of 8 eggs until firm and gently fold them in.

  5. Bake in cups or paper cases at 400°F (200°C) for 10 to 15 minutes.

  6. Sift powdered sugar flavored with vanilla powder or lemon zest on top.
