Lemon Pie

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Line a medium-sized pie plate with pastry.

Make the filling

  1. In a bowl, mix the lemon juice, grated rind, sugar, eggs, flour, and enough milk to fill the pie plate.

  2. Pour the mixture into the prepared pie crust and bake until set, about 40 minutes.

Make the meringue and finish

  1. Beat the egg whites to stiff peaks, then gradually add 4 tablespoons of powdered sugar.

  2. Spread the meringue over the baked pie and lightly brown in the oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the filling custard as they cook, giving the pie its body.
Egg whites
Whipped to stiff peaks, they form the airy structure of the meringue topping.
Sugar
Sweetens the filling and helps stabilise the whipped egg white meringue.
Lemon juice
Adds acidity that gives the filling its tart flavour.
Flour
Thickens the filling so it sets rather than staying runny.

The step that matters

Baking the filling until set. Underbaking leaves the egg-thickened filling runny, while overbaking can make it weep or crack. The filling should be set but still gently wobble in the centre.
