Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base that gives the cream its body and richness.
Gelatine
Sets the cooled mixture into a firm, sliceable cream.
Egg yolks
Add richness and help thicken the cream as it cooks.
Lump sugar
Sweetens the cream and balances the sharpness of the lemon.
Lemon juice
Adds acidity and bright lemon flavor to the cream.

The step that matters

Keep stirring while the cream cools. Stirring as the mixture cools keeps it smooth and evenly textured, preventing a grainy or uneven set. Stop too early and the gelatine can form lumps or uneven layers before the cream is fully cold.

Swap the almond

How well each one fits the dish's main ingredients (milk, lemon, sugar, egg):

  1. Milletfits about as well
  2. Almondthe original
  3. Pistachiofits about as well
  4. Walnutfits about as well

Fit is the average pairing score against milk, lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
