Why it works: Pepper and allspice match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 6,395 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Pickled Beetroot

Ingredients

Directions

Prepare the beets

  1. Wash the beets thoroughly, avoiding pricking the skin to retain color.

  2. Boil the beets in water until three-quarters cooked, about 30 minutes.

  3. Remove the beets and let them cool.

Make the pickle

  1. Boil the vinegar with pepper and allspice for 20 minutes, then let it cool.

  2. Peel and slice the beets into ½-inch thick slices.

  3. Pour the cooled vinegar over the beets and cover to exclude air.

Rest

  1. Let them sit for a week before using.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Vinegar
Provides acidity that sharpens flavor and helps preserve the beets.
Whole pepper
Adds a warm, sharp aroma that flavors the pickling liquid.
Allspice
Adds a warm, sweet-spiced aroma to the pickling liquid.

The step that matters

Let the vinegar cool before pouring it over the beets. Hot liquid keeps cooking the beets, which softens their texture and can cause them to bleed more color. Cooling the vinegar first keeps the slices firm and bright.

Swap the allspice

How well each one fits the dish's main ingredients (vinegar, pepper):

  1. Tarragonfits better
  2. Dillfits better
  3. Parsleyfits about as well
  4. Allspicethe original

Fit is the average pairing score against vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
