The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm jelly as it cools.
Grape juice
Provides the main liquid and the grape flavour of the jelly.
Sugar
Adds sweetness and balances the tartness of the grape juice.
Lemon juice
Adds acidity that brightens the flavour and sharpens the grape taste.

The step that matters

Dissolving the gelatine. The gelatine must be fully dissolved in the hot liquid before it is combined with the juice. Undissolved granules leave grainy spots and weak patches, so the jelly may not set evenly.

Swap the grape

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Orangefits better
  2. Limefits better
  3. Vanillafits better
  4. Grapethe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
